Prepare the Custard

In a saucepan, combine the fresh orange juice, orange zest, and granulated sugar. Heat over medium heat until the mixture is warm, stirring occasionally.

Whisk Egg Yolks

In a separate bowl, whisk the egg yolks until they are pale and thick. Gradually add the warm orange mixture into the egg yolks while whisking continuously to temper the yolks.

Cook the Mixture

Return the egg yolk mixture to the saucepan and cook over low heat, stirring constantly, until the custard thickens enough to coat the back of a spoon (about 5-7 minutes).

Add Cream and Amaretto

Remove the saucepan from heat and stir in the heavy cream and amaretto liqueur until fully combined.

Chill the Budino

Pour the custard into serving cups or ramekins and refrigerate for at least 2 hours or until set.

Serve

Before serving, garnish each budino with dark chocolate shavings and a wafer cookie.
