Make a quick brine: in a medium bowl or measuring cup dissolve 2 tbs kosher salt and 1 tbs sugar in 4 cups cold water. Add smashed garlic, 4 thyme sprigs and sliced lemon. Stir to combine.

Submerge the half chicken in the brine. Cover and refrigerate for 1 to 2 hours. Do not brine longer to avoid overly salty meat for a half chicken.

Remove chicken from brine, pat thoroughly dry with paper towels. Discard brine. Season skin lightly with freshly ground black pepper (about 1 tsp) and rub 1 tbs olive oil over the skin.

Prepare Lavender Honey Glaze

Bloom the lavender: place 1 tsp dried culinary lavender buds in a small heatproof bowl. Pour 2 tbs hot (not boiling) water over the buds and steep 5 minutes to extract floral aroma.

Strain the lavender infusion through a fine mesh sieve to remove buds, pressing to extract liquid. Discard solids and reserve 1 tbs of the lavender-infused liquid; discard the rest or reserve for tea.

In a small saucepan over low heat combine 4 tbs honey, the reserved 1 tbs lavender liquid, 1 tbs unsalted butter, 1 tsp apple cider vinegar and a pinch of sea salt. Warm gently while stirring until butter melts and honey thins slightly, about 2–3 minutes. Do not boil. Taste and adjust: add a small pinch more salt or 1/4 tsp vinegar if you want brighter balance. Keep warm and set aside.

Assemble & Roast

Preheat oven to 425°F (220°C). Position rack in the middle of oven. Place a roasting pan or rimmed baking sheet in the oven to warm for a few minutes (optional) or line with foil for easier cleanup.

Gently loosen chicken skin over the breast and thigh (use your fingers) and spread 1 tbs softened unsalted butter under the skin to keep meat moist and add flavor. Tuck 2 sprigs of rosemary or thyme beneath the skin or in the cavity/under the chicken.

Place the chicken, skin side up, on the warmed roasting pan. Drizzle 1 tsp olive oil over the skin if needed and sprinkle the lemon zest evenly over the chicken.

Roast the half chicken at 425°F (220°C) for 20 minutes to develop color. After 20 minutes, reduce oven temperature to 375°F (190°C).

Begin brushing: with a pastry brush, apply a thin layer of the lavender honey glaze over the skin. Continue roasting for another 20–30 minutes, brushing glaze every 8–10 minutes to build up a glossy coating. Total roasting time after initial high-heat sear should be about 25–35 minutes depending on size—cook until internal temperature at the thickest part of the thigh reaches 165°F (74°C) and juices run clear.

If glaze begins to darken too quickly, tent loosely with foil. For extra crisp skin, remove foil for the last 5 minutes and brush a final layer of glaze.

Remove chicken from oven and transfer to a cutting board. Let rest 8–10 minutes to allow juices to redistribute. While resting, spoon any pan juices into the remaining glaze, whisk briefly and warm slightly to serve as a sauce.

Serve & Garnish

Carve the half chicken into portions (breast slices, thigh/drumstick). Brush each portion with the warm lavender honey sauce.

Garnish with microgreens or additional thyme sprigs and a light sprinkle of lemon zest. Serve immediately alongside roasted vegetables, a simple salad, or steamed rice.
