Prepare the spiced base

In a medium saucepan combine the apple cider, white grape juice, sliced ginger, and the cinnamon stick. Warm over medium-low heat until just below a simmer (do not boil), about 6–8 minutes to allow flavors to meld. Stir in the honey (or agave) and vanilla extract until dissolved. Remove from heat and let the mixture cool to room temperature, about 30 minutes, leaving the ginger and cinnamon in to continue infusing.

Prep the fruit

While the spiced base cools, thinly slice the orange, lemon, and green apple. Halve the seedless grapes. Lightly bruise half of the mint sprigs with the back of a spoon to release aroma.

Combine fruit and base

In a large pitcher add the sliced orange, lemon, apple, grapes, and bruised mint. Strain the cooled spiced cider mixture into the pitcher, discarding the ginger slices and cinnamon stick (or leave the cinnamon in for a stronger flavor). Stir gently to combine. Cover and refrigerate for at least 2 hours and up to 8 hours to allow fruit to macerate and flavors to marry.

Finish & Serve

Chill and add sparkle

About 10 minutes before serving, add chilled sparkling water to the pitcher and gently stir to combine. Taste and adjust sweetness with an additional 1 teaspoon honey or agave if desired.

Serve

Fill glasses with ice. Distribute fruit evenly among glasses and pour the Golden N.A. Sangria over the ice. Garnish each glass with a fresh mint sprig and optionally a star anise. Serve immediately.
