Prepare the Steaks

Take the New York Strip steaks out of the refrigerator and let them come to room temperature (about 30 minutes).

Season the Steaks

Rub both sides of the steaks with olive oil, then season generously with kosher salt, black pepper, and garlic powder. Sprinkle fresh rosemary over the steaks.

Preheat the Grill or Skillet

Preheat your grill to high heat or heat a cast-iron skillet over medium-high heat until hot.

Cook the Steaks

Place the steaks on the grill or skillet. Cook for about 4-5 minutes on one side, then flip and cook for an additional 4-5 minutes for medium-rare (adjust time for your preferred doneness).

Add Butter

In the last minute of cooking, add butter to the skillet or grill and baste the steaks with the melted butter.

Rest the Steaks

Remove the steaks from heat and let them rest for 5-10 minutes before slicing. This allows the juices to redistribute.

Slice the steaks against the grain and serve with lemon wedges, if desired.
