If oysters are not pre-shucked, shuck and collect oyster liquor; reserve oysters in a bowl over ice. For pre-shucked oysters, place them in a fine-mesh sieve and let excess liquid drain for 5–10 minutes, then transfer to a bowl with 1 cup ice water to firm for 5 minutes. Drain well and pat dry with paper towels. Excess moisture prevents proper crisping.

Breading station

Set up three stations: (1) dredge bowl with seasoned flour mixture, (2) wet bowl with egg-milk wash, (3) plate with flour mixture or a combined mixture for second dredge. In a shallow bowl or rimmed plate combine 1 cup all-purpose flour, 1/2 cup cornmeal, 1/4 cup cornstarch, 1/2 tsp baking powder, 2 tsp kosher salt, 1 tsp black pepper, 1 tsp Cajun seasoning, 1/2 tsp garlic powder, and 1/2 tsp paprika. Whisk to evenly distribute.

Wet batter / dredge

In a second bowl whisk together 2 large eggs, 3/4 cup whole milk, 1 tsp hot sauce (optional), and 1/2 tsp Worcestershire sauce until combined. This mix helps the dry breading adhere and adds flavor.

Coating the oysters

Single or double dredge

Working in batches of 6–8 oysters to avoid crowding, dredge each oyster first in the dry mixture (lightly coat and shake off excess), then dip into the egg-milk wash, then return to the dry mixture for a final coating. Press gently so the coating adheres. Place coated oysters on a wire rack and let rest 5–10 minutes to help the crust set.

Frying

Pour about 4–6 cups oil into a heavy-bottomed pot or Dutch oven (about 2–3 inches deep). Heat oil over medium-high heat until it reaches 350°F (175°C). If you don't have a thermometer, test with a small piece of bread or a small bit of the batter — it should sizzle steadily and brown in about 45–60 seconds.

Fry oysters in a single layer in batches (6–8 at a time depending on pot size) without crowding. Carefully lower oysters into the hot oil using a slotted spoon or spider. Fry for 1.5–2.5 minutes, turning gently if needed, until golden brown and crisp. Smaller oysters may cook faster; watch for deep golden color.

Use a slotted spoon to transfer fried oysters to a wire rack set over a sheet pan lined with paper towels. Immediately season lightly with 1/2 tsp salt sprinkled evenly over the oysters. Let cool 1–2 minutes before serving. Repeat with remaining oysters, allowing oil to return to 350°F between batches.

Finishing & serving

Transfer fried oysters to a serving platter, sprinkle with 2 tbsp finely chopped parsley and serve with lemon wedges. Serve hot with preferred accompaniments such as cocktail sauce, remoulade, or tartar sauce if desired.
