Prepare the conch

If using whole fresh conch, tenderize the meat by pounding lightly with a meat mallet until just flattened and tender (about 5 minutes). Rinse and pat dry with paper towels. Cut into small 1/4-inch pieces so the fritters have bite-sized pieces of conch.

Dry ingredients

In a large bowl whisk together 1 cup all-purpose flour, 1/2 cup cornmeal, 1 teaspoon baking powder, 1 teaspoon sea salt and 1/2 teaspoon ground black pepper until evenly combined.

Veggies and herbs

Stir the finely diced 1/4 cup onion, 1/4 cup green bell pepper, 2 tablespoons thinly sliced scallions and 2 tablespoons chopped parsley into the dry mix so they distribute evenly.

Wet ingredients & combine

In a separate bowl whisk 1 large egg with 3/4 cup milk, 1 teaspoon Worcestershire sauce and 1/2 teaspoon hot sauce (if using). Pour the wet mixture into the dry ingredients and stir until just combined — do not overmix. Fold in the prepared conch pieces so they are evenly coated. Batter should be thick enough to hold shape; if too thick, add 1-2 tablespoons milk, if too thin, add 1-2 tablespoons flour.

Heat oil

Pour about 2 cups vegetable oil into a heavy skillet or Dutch oven to a depth of roughly 1 to 1 1/2 inches. Heat oil over medium-high until it reaches 350°F (175°C) or until a small drop of batter sizzles and browns within 10–15 seconds.

Fry fritters

Using a tablespoon or small ice cream scoop, drop rounded batter portions (about 1 tablespoon each) into the hot oil, working in batches to avoid crowding (leave space for turning). Fry 2–3 minutes per side, turning once, until golden brown and cooked through. Adjust heat as necessary to maintain 325–350°F so the interior cooks without overbrowning the exterior.

Drain and rest

Use a slotted spoon to transfer cooked fritters to a wire rack set over a baking sheet or paper towels to drain. Keep fritters warm in a 200°F (95°C) oven while frying remaining batches.

Final seasoning

Taste one fritter and adjust with a light sprinkle of flaky sea salt if desired. Serve immediately alongside John-John sauce.

John-John Sauce (Served with fritters)

Combine 1/2 cup mayonnaise, 2 tablespoons ketchup, 1 teaspoon Dijon mustard and 1 tablespoon fresh lime juice in a small bowl. Whisk until smooth.

Stir in 1 tablespoon finely chopped scallion and 1/4 teaspoon minced hot pepper (seeded if you prefer less heat). Season with 1/4 teaspoon salt and 1/8 teaspoon ground black pepper. Taste and adjust—add more lime for brightness or more hot pepper for heat.

Cover and refrigerate at least 20 minutes to let flavors meld. Bring to room temperature before serving alongside the fritters.
