Prepare glass

Run the lime wedge around the rim of a rocks or coupe glass. Spread the coarse kosher or sea salt on a small plate and gently press and rotate the moistened rim into the salt to coat evenly. Set the glass aside.

Measure and combine

In a cocktail shaker, add 2 oz tequila, 1 oz fresh lime juice, 1 oz Cointreau (or Triple Sec), and 0.5 oz simple syrup if you prefer a slightly sweeter drink. Add a generous handful of ice (about 1 to 1.5 cups) to the shaker.

Shake

Secure the shaker lid and shake vigorously for 12–15 seconds until the outside of the shaker is frosty and well chilled. This both chills and dilutes the cocktail to the correct balance.

Strain and serve

Double-strain the cocktail into the prepared glass over fresh ice (if serving on the rocks) or without ice into the chilled coupe. Garnish with a lime wheel or wedge on the rim.

Notes

Adjust sweetness by omitting or reducing simple syrup. For a Tommy's Margarita, replace the orange liqueur and simple syrup with 1–1.5 oz agave syrup. Use fresh lime juice for best flavor; bottled lime juice will produce a noticeably different taste.
