Buñuelos (caracola-shaped)
Make the batter
In a large bowl whisk together the all-purpose flour, baking powder, granulated sugar and fine sea salt until evenly combined.
Pour the wet mixture into the dry ingredients and stir with a wooden spoon or spatula until a soft, slightly tacky batter forms. The batter should be thick enough to hold shape but still pipeable; if too thick add up to 2 tablespoons milk, if too loose add up to 2 tablespoons flour.
Shape the caracolas
Transfer batter to a pastry bag fitted with a large round tip (or use a heavy-duty zip-top bag with the corner snipped). Heat a deep pot with vegetable oil to 350°F (175°C). If you don’t have a thermometer, test with a small drop of batter — it should sizzle and rise immediately but not burn.
Working in batches, squeeze the batter into the hot oil in a spiral (caracola) shape starting from the center and circling outward to create a small spiral about 3–4 inches (7–10 cm) across. Cut the batter from the bag with scissors as you finish each spiral.
Fry each buñuelo for 2–3 minutes per side, turning once with a slotted spoon or tongs, until puffed and golden brown and cooked through. Maintain oil temperature between 330–360°F (165–180°C) for even cooking.
Use a slotted spoon to transfer finished buñuelos to a wire rack set over a baking sheet or to paper towels to drain. Repeat with remaining batter, allowing oil to return to temperature between batches.
Lightly dust the warm buñuelos with powdered sugar if using, or serve plain for a less sweet presentation.
Salsa John-John
While buñuelos fry, make the salsa John-John. In a small bowl combine mayonnaise and ketchup until smooth and homogenous.
Stir in the finely minced pickled jalapeño, fresh lime juice, minced garlic, smoked paprika, hot sauce (if using) and salt. Taste and adjust heat or acidity — add more lime juice for brightness or more pickled jalapeño for tang.
Fold in the finely chopped fresh cilantro. Chill the sauce in the refrigerator for at least 10 minutes to let flavors meld; bring to room temperature before serving if chilled longer.
Finishing & plating
Garnish with a light dusting of powdered sugar (optional) and serve with lime wedges on the side for squeezing over the buñuelos to add brightness.
