Rinse and Sort

Place the dried black beans in a colander and rinse under cool running water. Spread them on a baking sheet or plate and pick out any shriveled beans, stones, or debris.

Transfer the rinsed beans to a large bowl and cover with 6 cups of cold water. Let soak 6–8 hours or overnight at room temperature. For a quick-soak: bring beans and 6 cups water to a boil for 2 minutes, remove from heat, cover, and let stand 1 hour. Drain and discard the soaking water; this reduces cooking time and improves digestibility.

Saute Aromatics

Heat 2 tablespoons olive oil in a large heavy pot or Dutch oven over medium heat. Add the diced onion and a pinch of salt. Cook, stirring occasionally, until the onion is soft and translucent, about 6–8 minutes. Add the minced garlic and cook 30–45 seconds, until fragrant. Stir in 1 teaspoon ground cumin and 1/2 teaspoon dried oregano and cook 15–20 seconds to bloom the spices.

Add Beans and Simmer

Add the drained soaked beans to the pot along with 6 cups fresh water and 1 bay leaf. Bring to a gentle boil over medium-high heat, then reduce heat to maintain a low simmer. Partially cover the pot and cook, stirring occasionally and skimming any foam from the surface, until the beans are tender but not falling apart, 60–90 minutes depending on bean age. Check for liquid level and add up to 1 more cup of hot water if the pot becomes too dry.

Season and Finish Cooking

When beans are nearly tender (after about 50–70 minutes), add 1.5 teaspoons salt and 1/2 teaspoon black pepper. Continue simmering until completely tender, another 10–20 minutes. Taste and adjust salt. Remove and discard the bay leaf.

Finish & Serve

Stir in 1 tablespoon fresh lime juice and, if using, 1/2 finely diced jalapeño. Use a fork or a potato masher to mash about 1/2 to 1 cup of the beans against the side of the pot to slightly thicken the cooking liquid and create a creamier texture. If the beans are too thick, add a splash of hot water to reach desired consistency.

Adjust seasoning with additional salt, pepper, or more lime juice to taste. Remove from heat and stir in 2 tablespoons chopped cilantro if using. Serve warm topped with a dollop of sour cream or crema if desired.
