Prepare the Vegetables
Dice the jalapeno, onion, and tomato into small pieces. Set aside.

Cook the Omelet
In a non-stick skillet, melt the butter over medium heat. Add the diced jalapeno and onion, and sauté until softened, about 3-4 minutes. Add the beaten eggs and cook until the edges begin to set, then gently lift the edges with a spatula to allow uncooked eggs to flow underneath. When the top is still slightly runny, sprinkle the diced tomatoes and cheddar cheese on one half of the omelet. Fold the omelet over and cook for another minute until the cheese melts. Slide onto a plate.

Prepare the Bread
For toast, place the bread slices in a toaster until golden brown. For biscuits, bake according to package instructions or until golden brown.
