Preheat your oven to 450°F (232°C). In a large bowl, combine the flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the milk until just combined.

Form and Bake Biscuits
Turn the dough out onto a floured surface and knead gently. Pat into a 1-inch thick circle and cut with a biscuit cutter. Place biscuits on a baking sheet and bake for 12-15 minutes until golden brown.

Cook the Sausage
In a saucepan over medium heat, cook the breakfast sausage until browned, breaking it up as it cooks.

Sprinkle flour over the cooked sausage and stir to combine. Gradually whisk in milk and bring to a simmer. Cook until thickened, about 5 minutes. Season with salt and black pepper.
