Select ripe Pinot Noir grapes from the vineyard. Ensure they are free from rot and have a good balance of sugar and acidity.

Harvesting Grapes

Crush the harvested grapes gently to extract the juice, ensuring that the skins remain intact for flavor and color extraction.

Transfer the crushed grapes and juice into a fermentation vessel. Add 15g of wine yeast to the mixture to start fermentation. Allow the mixture to ferment for 5-7 days at a controlled temperature of around 20°C (68°F).

Fermentation

After fermentation, press the mixture to separate the liquid wine from the grape skins. This process helps to enhance the flavor and color of the wine.

Pressing

Dilute the pressed wine with 300ml of water and add 5g of sulfites to preserve the wine and prevent spoilage.

Adding Water and Sulfites

Transfer the wine to oak barrels for aging. Allow it to age for at least 6 months to develop the characteristic flavors of cherry, raspberry, vanilla, and spice.

Aging

Once aged, filter the wine and bottle it in clean, sterilized bottles. Seal with corks and label accordingly.

Bottling

Allow the wine to breathe for a short time before serving. Enjoy it on its own or pair it with grilled salmon for an exquisite experience.
