CK Mondavi Pinot Grigio has aromas of wildflowers, peaches and pears. Fresh, tropical flavors combined with a touch of spice in this medium-bodied wine provide a lovely finish that is crisp and refreshing on the palate.

Begin by harvesting 100 kg of ripe Pinot Grigio grapes. Ensure that the grapes are healthy and free from rot to produce the best quality wine.

Harvesting Grapes

Crush the harvested grapes in a clean container to release their juice. After crushing, press the grapes to separate the juice from the skins and seeds.

Transfer the juice to a fermentation vessel. Add 10 g of yeast and mix gently. Allow the juice to ferment at a controlled temperature of around 15-20°C (59-68°F) for 2-4 weeks.

After fermentation is complete, add 5 g of sulfites to the wine to prevent oxidation and spoilage. Stir gently to ensure even distribution.

If desired, add 50 g of oak chips to the wine for added complexity and flavor. Allow the wine to age for an additional 1-3 months, tasting periodically.

Optional Oak Aging

Once aging is complete, filter the wine to remove any sediment. Bottle the wine in clean, sterilized bottles, and cork them securely.

Filtration and Bottling

Chill the bottled Pinot Grigio in the refrigerator for several hours before serving. Serve chilled in wine glasses, and enjoy the refreshing flavors and aromas.
