Sauté Vegetables
In the remaining grease, add diced bell pepper and onion. Sauté until softened, about 3-4 minutes. Add diced tomato and stir for another minute. Remove from heat.

Cook the Omelet
In a non-stick skillet, pour in the beaten eggs and cook over medium-low heat. Use a spatula to push the cooked edges toward the center while tilting the pan to allow uncooked egg to flow to the edges.

Add Fillings
Once the eggs are mostly set, add the sautéed vegetables, chopped bacon, sausage, and ham on one half of the omelet. Top with cheddar cheese.

Fold and Finish
Carefully fold the omelet in half over the fillings and cook for another 1-2 minutes until the cheese melts and the omelet is cooked through. Slide onto a plate.

Prepare Crispy Hash Browns or Tater Tots
For crispy hash browns, cook according to package instructions until golden and crispy. For tater tots, bake or fry as directed until golden brown.
