Prepare the Filling
In a skillet over medium heat, melt half of the butter. Add the thinly sliced steak and cook for about 3-4 minutes until browned. Add diced green bell pepper and onion, cooking for another 2-3 minutes until the vegetables are tender. Season with salt and black pepper. Remove from heat and set aside.

Make the Eggs
In a bowl, whisk together the eggs, salt, and black pepper until well combined. Heat the remaining butter in a non-stick skillet over medium heat.

Cook the Omelet
Pour the egg mixture into the skillet. Cook for about 2-3 minutes or until the edges start to set. Gently lift the edges with a spatula and let any uncooked egg flow to the edges. Once the surface is mostly set but still slightly runny, add the steak and vegetable mixture on one half of the omelet and top with American cheese.

Fold and Serve
Carefully fold the other half of the omelet over the filling. Cook for an additional minute until the cheese melts. Slide the omelet onto a plate and keep warm.

If desired, prepare crispy hash browns or tater tots according to package instructions. Toast or warm the biscuit in the oven or toaster.
