Omelet Preparation

    Prepare the Vegetables

    Dice the bell peppers, onion, tomatoes, and mushrooms into small pieces.

    Beat the Eggs

    In a mixing bowl, crack the eggs and add salt and black pepper. Whisk until well combined.

    Cook the Vegetables

    In a non-stick skillet, melt 1 tablespoon of butter over medium heat. Add the diced bell peppers, onions, tomatoes, and mushrooms. Sauté for about 5 minutes until softened.

    Cook the Omelet

    Pour the beaten eggs over the sautéed vegetables in the skillet. Cook for about 2-3 minutes, gently lifting the edges with a spatula to allow uncooked egg to flow underneath.

    Add Cheese and Finish Cooking

    Once the eggs are nearly set, sprinkle the American cheese on top. Fold the omelet in half and cook for another minute until the cheese is melted.

Side Dish Preparation

    Prepare the Skillet Potatoes

    In a separate skillet, melt the remaining 1 tablespoon of butter over medium heat. Add diced onion and cook until translucent. Add the skillet potatoes and cook until golden brown and crispy, about 10-15 minutes.

    Prepare Hash Browns or Tater Tots

    If using frozen hash browns or tater tots, cook according to package instructions until crispy.

    Toast the Bread

    Toast the slices of bread and spread with butter before serving.
