    Prepare the Marinade

    In a mixing bowl, combine olive oil, minced garlic, lemon juice, paprika, cayenne pepper, salt, and black pepper.

    Marinate the Shrimp

    Add the peeled and deveined shrimp to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

Cooking the Shrimp

    Preheat the Grill

    Preheat your grill to medium-high heat, about 400°F (200°C).

    Grill the Shrimp

    Thread the marinated shrimp onto skewers. Grill for 2-3 minutes on each side, or until the shrimp are opaque and cooked through.

Preparing the Side Dish

    Cook the Quinoa

    In a saucepan, bring 2 cups of water to a boil. Add 1 cup of quinoa, cover, and reduce heat to low. Cook for 15 minutes or until the quinoa is fluffy and water is absorbed.

    In a large bowl, combine the cooked quinoa with halved cherry tomatoes, diced cucumber, chopped parsley, crumbled feta cheese, and olive oil. Toss gently to mix. Season with salt and pepper to taste.
