Shrimp Preparation

    Marinate the Shrimp

    In a large bowl, combine the olive oil, minced garlic, lemon juice, paprika, cayenne pepper, salt, and black pepper. Mix well to form a marinade.

    Add Shrimp

    Add the peeled and deveined shrimp to the marinade. Toss to coat all the shrimp evenly. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes.

Cooking the Shrimp

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill the Shrimp

    Once the grill is hot, thread the shrimp onto skewers (if using wooden skewers, soak them in water for 30 minutes beforehand). Place the skewers on the grill and cook for about 2-3 minutes per side, or until the shrimp are opaque and cooked through. Remove from the grill and set aside.

    Cook the Quinoa

    In a medium saucepan, combine the quinoa and vegetable broth. Bring to a boil, then reduce the heat to low, cover, and let it simmer for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it sit for 5 minutes before fluffing with a fork.

    Sauté the Vegetables

    While the quinoa is cooking, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the trimmed asparagus and halved cherry tomatoes. Season with salt and black pepper to taste. Sauté for about 5-7 minutes, until the vegetables are tender but still crisp.

Plating

    Serve the Dish

    On each plate, serve a portion of quinoa, a helping of sautéed asparagus and cherry tomatoes, and top with grilled shrimp. Enjoy your delicious grilled shrimp dinner!
