Method

Prepare the Haddock

  1. 1

    Season the Haddock

Pat the haddock fillets dry with paper towels. Season both sides with salt and black pepper.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat. Brush the grill grates with olive oil to prevent sticking.

  3. 3

    Grill the Haddock

Place the seasoned haddock fillets on the grill. Cook for about 3-4 minutes on one side, then carefully flip and grill for another 3-4 minutes, or until the fish is opaque and flakes easily with a fork.

Prepare the Side Dish

  1. 4

    Prepare the Asparagus

Rinse the asparagus under cold water and trim the tough ends.

  2. 5

    Season and Cook the Asparagus

In a bowl, toss the asparagus with olive oil, minced garlic, salt, and juice from half of the lemon. Place on the grill alongside the haddock and cook for about 5-7 minutes, turning halfway through, until tender but still crisp.

  3. 6

    Serve

Remove the haddock and asparagus from the grill. Squeeze the remaining lemon juice over both and serve warm.
