Method

Preparing the Haddock

    Marinate the Haddock

    In a bowl, combine the olive oil, lemon juice, paprika, garlic powder, salt, and black pepper. Mix well.

    Coat the Haddock

    Place the haddock fillets in the bowl and coat them evenly with the marinade. Let it sit for at least 15 minutes.

    Grill the Haddock

    Preheat the grill to medium-high heat. Grill the haddock fillets for about 4-5 minutes on each side, or until they are cooked through and have nice grill marks.

Preparing Roasted Vegetables

    Chop the Vegetables

    Chop the zucchini and bell peppers into bite-sized pieces.

    In a mixing bowl, combine the chopped vegetables with olive oil, salt, and black pepper. Toss until evenly coated.

Cooking the Quinoa

    In a medium saucepan, combine the rinsed quinoa and water. Add salt to taste. Bring to a boil, then reduce heat to low and cover. Simmer for about 15 minutes or until the quinoa is fluffy and water is absorbed.
