Preparing the Haddock

Coat the Haddock
Place the haddock fillets in the bowl and coat them evenly with the marinade. Let it sit for at least 15 minutes.

Chop the Vegetables
Chop the zucchini and bell peppers into bite-sized pieces.

Season the Vegetables
In a mixing bowl, combine the chopped vegetables with olive oil, salt, and black pepper. Toss until evenly coated.

Spread the vegetables out on a baking sheet and roast in the oven at 425°F (220°C) for 20-25 minutes, or until tender and slightly caramelized.

Rinse the Quinoa
Rinse the quinoa under cold water in a fine mesh strainer to remove any bitterness.

In a medium saucepan, combine the rinsed quinoa and water. Add salt to taste. Bring to a boil, then reduce heat to low and cover. Simmer for about 15 minutes or until the quinoa is fluffy and water is absorbed.
