Preparing the Cajun Haddock

    Marinate the Haddock

    In a large bowl, combine the olive oil, lemon juice, Cajun seasoning, salt, and black pepper. Add the haddock fillets, ensuring they are well coated in the marinade. Cover and let marinate for at least 30 minutes.

    Preheat the Grill

    Preheat your grill to medium-high heat, about 400°F (200°C).

    Grill the Haddock

    Remove the haddock from the marinade and place it on the grill. Grill for 4-5 minutes on each side or until the fish is cooked through and flakes easily with a fork.

    Cook the Quinoa

    In a medium saucepan, bring 2 cups of vegetable broth to a boil. Add 1 cup of quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the liquid is absorbed. Fluff with a fork and set aside.

    Steam the Broccoli

    In a steamer basket over boiling water, steam the broccoli for about 5-7 minutes until tender but still bright green. Remove from heat.
