Preparing the Fish

    Marinate the Haddock

    In a small bowl, mix together olive oil, Cajun seasoning, salt, and black pepper. Rub this mixture all over the haddock fillets. Allow the fillets to marinate for at least 15 minutes.

    Preheat the Grill

    Preheat your grill to medium-high heat, approximately 375°F (190°C).

    Grill the Haddock

    Place the marinated haddock fillets on the grill. Cook for about 4-5 minutes on each side, or until the fish flakes easily with a fork and has a nice char.

Preparing the Sides

    Prepare the Asparagus

    Trim the ends off the asparagus and toss with olive oil, salt, and pepper. Grill alongside the haddock for about 5-7 minutes, turning occasionally until tender and slightly charred.

    Roast the Cherry Tomatoes

    In a foil packet, toss cherry tomatoes with a drizzle of olive oil, salt, and pepper. Place on the grill for the last 5 minutes of cooking, or until they are blistered.

    Cook the Brown Rice

    In a saucepan, bring vegetable broth to a boil. Add brown rice, reduce heat to low, cover, and simmer for about 40-45 minutes or until the rice is tender and the liquid is absorbed.

    Prepare the Lemon

    Cut the lemon into wedges for serving alongside the grilled fish and vegetables.
