    In three separate shallow dishes, place the flour mixed with salt and pepper in the first, beaten eggs in the second, and breadcrumbs in the third.

    Coat each fillet in flour, shaking off the excess. Then dip it into the beaten eggs, allowing any excess to drip off, and finally coat it with breadcrumbs, pressing gently to adhere.

    In a large skillet, heat vegetable oil over medium-high heat until it shimmers.

    Carefully place the breaded haddock fillets in the hot oil, cooking for about 3-4 minutes on each side or until they are golden brown and cooked through. Avoid overcrowding the skillet; cook in batches if necessary.
