Sprinkle the haddock fillets with salt and black pepper on both sides. Let them sit for about 10 minutes to absorb the seasoning.

Bread the Haddock
Dredge each seasoned haddock fillet in flour, shaking off excess. Dip into the beaten eggs, ensuring they are fully coated, then press into the breadcrumb mixture until well covered.

In a large skillet, heat the vegetable oil over medium-high heat until it shimmers, about 5 minutes.

Carefully place the breaded haddock fillets in the hot oil. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and place on paper towels to drain excess oil.
