Cake Preparation

Preheat Oven
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking soda, ground cinnamon, and salt until well combined.

Combine Ingredients
Gradually pour the wet ingredients into the dry ingredients, mixing until just combined. Be careful not to overmix.

Add Carrots and Walnuts
Fold in the grated carrots and chopped walnuts (if using) until evenly distributed in the batter.

Bake the Cake
Divide the batter evenly between the prepared cake pans and smooth the tops. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer to wire racks to cool completely.

Beat Cream Cheese and Butter
In a medium bowl, beat the softened cream cheese and unsalted butter together until creamy and smooth.

Gradually add powdered sugar and vanilla extract, beating until the frosting is light and fluffy.

Frost the Cake
Once the cakes are completely cooled, place one layer on a serving plate. Spread a generous amount of frosting on top, then place the second layer on top and frost the top and sides of the cake.
