Sauce / Pumpkin-Silken Tofu Base

    Combine base ingredients

    Drain any excess liquid from the silken tofu by gently pressing in a fine mesh strainer for 1–2 minutes. Add the silken tofu, canned pumpkin puree, vegetable broth, soy milk, olive oil, maple syrup, apple cider vinegar, ground nutmeg, black pepper, and 1 tsp salt to a blender or food processor.

    Blend on high until completely smooth and creamy, about 60–90 seconds. Taste and adjust seasoning: add more salt, pepper, or a splash more vinegar or maple syrup if needed for balance. The finished consistency should be pourable but thick — similar to a heavy cream sauce. If too thick, thin with up to 2 additional tablespoons of broth or milk.

    Transfer the blended sauce to a medium saucepan and warm over low heat while you prepare the mushrooms. Stir occasionally to prevent sticking; do not boil. Keep warm for serving (about 5–8 minutes).

Mushrooms & Aromatics

    Prepare mushrooms by wiping them clean with a damp paper towel and trimming stems. Slice larger mushrooms into 1/4-inch slices; leave small ones halved or whole for visual variety.

    Heat 1 tablespoon olive oil and 1 tablespoon butter (if using) in a large skillet over medium-high heat until shimmering. Add the mushrooms in a single layer (work in batches if needed) and let them brown without stirring for 2–3 minutes to develop color.

    Stir the mushrooms and continue to cook until they release their liquid and it evaporates, about 4–6 more minutes. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper while they cook.

    Push mushrooms to the side of the pan, add the minced shallot and sauté 1–2 minutes until translucent, then add the minced garlic and thyme and cook 30–45 seconds until fragrant. Mix everything together.

    Deglaze the pan with 1–2 tablespoons of vegetable broth (or water) and scrape up any browned bits. Add the warmed pumpkin-silken tofu sauce to the skillet with the mushrooms and gently stir to combine. Simmer together on low for 2–3 minutes to let flavors meld; do not boil.

    Finish with 1 teaspoon lemon juice and 2 tablespoons chopped parsley. Taste and adjust seasoning, adding up to an additional 1/2 teaspoon salt or more pepper as needed.

To Serve

    Spoon the pumpkin-silken tofu mushroom sauce over cooked pasta, steamed rice, or toasted slices of crusty bread. Garnish with toasted pumpkin seeds and grated Parmesan or vegan alternative if desired.

    Serve immediately while warm. Leftovers keep in an airtight container in the refrigerator for up to 3 days; gently reheat on the stovetop with a splash of broth to loosen the sauce.
