Duck Liver Mousse

Prepare and clean livers
Rinse the duck livers under cold water and pat dry with paper towels. Trim away any greenish bile, connective tissue and large blood vessels. Cut livers into roughly even pieces so they cook evenly.

Cook aromatics and deglaze
In a medium skillet over medium-low heat, melt 20 g of the unsalted butter. Add the chopped shallot and crushed garlic and sweat gently until soft and translucent, about 3–4 minutes—do not brown. Add the thyme and the duck livers and increase heat to medium. Sear the livers briefly, about 1–2 minutes per side, so the exterior is lightly colored but the interior stays tender.

Deglaze and simmer
Pour the white wine and brandy over the livers and use a wooden spoon to scrape any browned bits from the pan. Allow the alcohol to reduce for 1–2 minutes. Pour in the heavy cream, reduce heat to low and simmer very gently for 2–3 minutes to finish cooking the livers; they should be just cooked through and still tender inside. Turn off the heat and let cool slightly.

Optional: bloom gelatin
If using gelatin for a firmer set, sprinkle the gelatin over 15 ml cold water in a small bowl and let it bloom for 5 minutes. Warm gently (microwave 5–8 seconds or over a pan) until dissolved but not boiling, then stir into the warm cream-liver mixture.

Blend and pass
Transfer the cooked livers, aromatics, and pan juices to a food processor or blender. Add the remaining 40 g unsalted butter (cut into pieces), salt and pepper. Purée on high until very smooth, about 1–2 minutes. If desired for an ultra-silky texture, pass the purée through a fine-mesh sieve into a bowl using a spatula, pressing to remove any graininess.

Brown the butter
In a small saucepan over medium heat, melt the 100 g unsalted butter and continue cooking until it turns a deep golden brown with a nutty aroma (beurre noisette), about 4–6 minutes. Watch carefully to avoid burning. Remove from heat and let cool slightly for 2 minutes, then stir in the vanilla extract.

Combine batter
Slowly pour the warm browned butter into the almond-egg-white mixture while folding gently to create a smooth batter. The butter should be warm but not so hot that it cooks the egg whites. Let the batter rest at room temperature for 10–15 minutes — this helps relax the flour and improves texture.

Fill molds and bake
Butter and flour or spray a financier or small muffin pan. Spoon batter into the molds filling about 3/4 full. Sprinkle sliced almonds on top if using. Bake in the preheated oven for 10–14 minutes, until edges are golden and centers spring back lightly when touched. Rotate the pan halfway through baking for even color.

Cool
Remove financiers from oven and allow to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely. Financiers are best served slightly warm or at room temperature.

Accompaniments: Place 1 financier alongside each mousse portion. Add 1 small cornichon or a piece of pickled shallot and a few crusty bread slices or crackers per serving. Garnish with microgreens or a small sprig of thyme/chives.

Serving temperature and storage: Serve mousse chilled with financiers at room temperature or slightly warm. Refrigerate any leftover mousse (sealed with melted butter or plastic wrap) for up to 3 days. Store financiers in an airtight container for 1–2 days.
