1. Mash the Grains
In a large pot, heat 6 liters of filtered water to 70°C (158°F). Add the pale malt and carapils malt, stirring to combine. Maintain the temperature for 60 minutes.
2. Sparge the Grains
After mashing, sparge the grains with hot water to collect approximately 5 liters of wort.
3. Boil the Wort
Bring the wort to a boil and add Hallertau hops. Boil for 60 minutes, adding Saaz hops in the last 10 minutes.
4. Cool the Wort
Cool the wort quickly to around 20°C (68°F) using an immersion chiller or an ice bath.
5. Fermentation
Transfer the cooled wort to a sanitized fermentation vessel and pitch the lager yeast. Seal with an airlock and ferment for 2-3 weeks at a consistent temperature of 10-12°C (50-54°F).
6. Priming and Bottling
After fermentation is complete, dissolve corn sugar in a small amount of water and add to the beer. Bottle the beer and cap securely.
7. Carbonation
Allow the bottles to carbonate at room temperature for 1-2 weeks before chilling and enjoying your Cameron's Lager.
