Strawberry Shake

Fruit flavors, oak and acidity in harmony and balance. Both lush and crisp, with scents of lemon zest and flavors of peaches and apricots.

Select ripe Chardonnay grapes, ensuring they are free from any rot or blemishes. Wash them gently under cold water.

Harvesting Grapes

Crush the grapes in a clean fermentation vessel to release their juices. This can be done using a wine press or by hand.

Add 200 ml of water and 10 grams of sugar to the crushed grapes. Stir well to dissolve the sugar completely.

Adding Water and Sugar

Sprinkle 1 tsp of yeast over the mixture and gently stir. This will start the fermentation process.

Cover the fermentation vessel with a clean cloth and let it sit in a cool, dark place for 7-14 days. Stir the mixture daily to release gases.

Fermentation

After fermentation, add 10 grams of oak chips, 5 grams of lemon zest, 50 grams of peach puree, and 50 grams of apricot puree to the mixture. Stir well to combine.

Adding Flavorings

Transfer the mixture to a clean carboy or fermentation vessel and seal it with an airlock. Allow it to ferment for an additional 4-6 weeks.

Secondary Fermentation

Once fermentation is complete, siphon the wine into clean bottles, leaving some space at the top. Seal the bottles with corks.

Bottling

Store the bottles in a cool, dark place for at least 6 months to allow the flavors to mature and develop.
