Method

Preparing the Steak

Slice the Steak

Thinly slice the ribeye steak against the grain into strips.

Season the Steak

In a bowl, season the steak slices with salt and black pepper.

Sear the Steak

In a skillet, heat the olive oil over medium-high heat. Add the steak strips and sear for 2-3 minutes until browned. Remove from the skillet and set aside.

Cooking the Vegetables

Sauté the Onions and Peppers

In the same skillet, add a bit more olive oil if necessary. Sauté the sliced onion and green bell pepper for about 5 minutes until they start to soften.

Add the Mushrooms and Garlic

Add the sliced mushrooms and minced garlic to the skillet. Cook for an additional 4-5 minutes until the mushrooms are tender.

Combine with Steak

Return the cooked steak to the skillet with the vegetables. Stir to combine and heat through for about 2 minutes.

Assembling the Sandwich

Prepare Hoagie Rolls

Slice the hoagie rolls lengthwise without cutting all the way through.

Melt the Cheese

Place a portion of the steak and vegetable mixture into each roll. Top with provolone cheese and place under a broiler for 2-3 minutes until the cheese melts.

Butter the Rolls

While the cheese is melting, melt the butter in a small saucepan. Brush the melted butter on the outside of the hoagie rolls.

Serve

Remove the sandwiches from the oven, let cool slightly, then serve warm.
