Prepare demerara simple syrup (if not ready)
Combine 2 parts demerara sugar with 1 part water in a small saucepan (for example, 1 cup sugar and 1/2 cup water). Heat gently, stirring, until the sugar fully dissolves. Remove from heat and cool. Transfer to a bottle and refrigerate. Keeps ~2 weeks.
Build the cocktail
Add 2 oz WhistlePig 6 Year rye whiskey to a mixing glass.
Add 0.5 oz demerara simple syrup to the mixing glass with the whiskey.
Add 2 dashes Angostura bitters into the mixing glass.
Stir with ice
Fill the mixing glass with large ice and stir briskly for 20–30 seconds (or about 25–30 full strokes) until well-chilled and slightly diluted.
Strain and serve
Place one large clear ice cube into a chilled rocks glass. Strain the stirred cocktail over the ice cube.
Express and garnish
Take a fresh orange peel. Hold it skin-side down over the glass and give it a firm twist to express oils across the surface of the cocktail, then rub the peel around the rim and drop it into the drink as a garnish. Optionally add a second orange twist for more aroma.
Serve immediately and enjoy. The balance should present the spicy rye forward with rich molasses notes from the demerara and aromatic depth from the Angostura and orange oils.
