Prepare ingredients

Chill a coupe or martini glass by filling it with ice and setting aside. If using egg white, separate one egg and reserve 1/2 oz (about half an egg white) in a shaker.

Dry shake (if using egg white)

In a cocktail shaker, combine Empress gin (2 oz), fresh lemon juice (0.75 oz), crème de cassis (0.5 oz), simple syrup (0.25 oz) and the egg white (0.5 each). Seal and dry-shake vigorously without ice for 15–20 seconds to build a frothy texture.

Shake with ice

Add a generous amount of ice to the shaker. Shake vigorously for another 12–15 seconds until the shaker is very cold to the touch and the mixture is well-chilled.

Strain

Discard ice from the chilled glass. Double-strain the cocktail into the chilled coupe or martini glass using a Hawthorne strainer and a fine mesh strainer to catch ice shards and any solids for a silky texture.

Garnish & Serve

Float a thin lemon twist across the top of the foam (if egg white used) or rim the glass with the lemon twist and drop it in. Gently place one or two fresh blackberries on a cocktail pick or drop them into the drink for visual contrast with the Empress gin’s indigo hue.

Serve immediately. Optionally, if you prefer a longer, lower-ABV version, build the ingredients over ice in a rocks glass with large ice and stir briefly instead of shaking, then garnish the same way.
