Chill glass

Place the serving glass (old-fashioned glass) in the freezer for a few minutes or fill it with ice and set aside to chill while you prepare the cocktail.

Combine ingredients

In a mixing glass add 2 oz Suntory Hibiki, 0.5 oz dry vermouth, 2 dashes orange bitters and 0.25 tsp simple syrup.

Add ice and stir

Fill the mixing glass with large ice cubes. Stir gently with a bar spoon for 20–30 seconds (about 20–30 back-and-forth strokes) until the mixture is well chilled and slightly diluted.

Prepare serving glass

Discard ice from the chilled serving glass if used. Place one large clear ice cube or sphere into the glass.

Strain

Using a strainer, pour the stirred cocktail from the mixing glass into the serving glass over the single large ice cube.

Garnish & Finish

Express orange oils

Hold the orange peel about 2–3 inches above the glass, skin side down. Give the peel a firm twist to express the oils onto the surface of the cocktail. Rub the peel around the rim of the glass.

Garnish

Drop the expressed orange peel into the drink or rest it on the rim.

Serve immediately and enjoy. The simple syrup is optional and can be adjusted to taste; the vermouth and orange bitters are intended to complement the floral, honeyed notes of the Hibiki without overpowering them.

Use the bar spoon to stir and the strainer to pour. Use a peeler or small knife to cut a 1–1.5 inch wide by 2–3 inch long orange peel, avoiding pith.
