1

Prep glass and garnish

Chill a highball or Collins glass in the freezer for a few minutes, or fill with ice to cool while you mix. If using a fresh lychee for garnish, peel and pit it now; otherwise drain a canned lychee and set aside.

2

Build the drink

In a cocktail shaker filled halfway with ice, combine 2 fl oz Grey Goose vodka, 1 fl oz lichi-li (lychee liqueur), 0.5 fl oz fresh lime juice and 0.25 fl oz simple syrup. Shake vigorously for about 10–15 seconds to chill and slightly dilute.

3

Assemble

Discard the ice from the chilled glass if you used it to chill. Add fresh ice to the glass (fill about 3/4). Strain the shaken mixture into the glass over the ice.

4

Top and finish

Top the cocktail with about 3 fl oz club soda. Gently stir once or twice to integrate the soda without flattening it. Taste and adjust: if you prefer sweeter, add a splash more simple syrup; for more brightness, add a few drops of lime juice.

5

Garnish and serve

Float the peeled lychee on top or skewer it with a cocktail pick and rest it on the rim. Add a lime wheel or wedge to the rim. Serve immediately with a straw if desired.
