Preheat the oven to 375°F (190°C). Lightly butter a 9x9-inch or similar shallow baking dish.

Prepare 6 cups of seasonal fruit: hull and halve berries if large, peel and dice peaches or nectarines into 1/2-inch pieces, or slice plums. Place the prepared fruit in a large mixing bowl.

Add 1/2 cup granulated sugar, 2 tbsp brown sugar, 1 tbsp lemon juice, 1 tsp lemon zest, 2 tsp cornstarch, 1/2 tsp vanilla extract, and 1/4 tsp fine salt to the fruit. Gently toss until fruit is evenly coated and cornstarch is distributed. Let sit 10 minutes to macerate (liquid will start to release).

Transfer the fruit and any accumulated juices to the buttered baking dish, spreading into an even layer. If the fruit looks very watery, tilt the bowl and spoon on excess run-off; you want juices but not a soupy filling.

Oat Crumble Topping

In a medium bowl combine 1.5 cups rolled oats, 3/4 cup all-purpose flour, 3/4 cup packed light brown sugar, 2 tbsp granulated sugar, 1/2 tsp ground cinnamon and 1/4 tsp fine salt. Whisk to blend dry ingredients.

Add 3/4 cup (1 1/2 sticks) cold unsalted butter cut into small cubes. Using a pastry cutter, two knives, or your fingertips, cut the butter into the dry mixture until the mixture forms coarse crumbs and some pea-sized buttery pieces remain. Alternatively pulse 6–8 times in a food processor for a coarse crumble.

Stir in 1/4 cup chopped toasted nuts if using. The topping should hold together slightly when squeezed but still be crumbly.

Evenly sprinkle the oat crumble over the fruit in the baking dish, pressing gently in a few spots so some topping contacts the fruit (this helps baking cohesion). Leave some crumble loose on top for texture.

Baking and Finishing

Place the assembled cobbler on a baking sheet (to catch any bubbling juices) and bake in the preheated 375°F (190°C) oven for 35–45 minutes, or until the topping is golden brown and the fruit filling is bubbling at the edges.

If the topping is browning too quickly before the filling bubbles, loosely tent with foil and continue baking until filling is done. Total time will depend on fruit ripeness and oven; check at 30 minutes.

Remove the cobbler from the oven and let rest on a wire rack 10–15 minutes to allow the juices to thicken slightly. This also makes serving cleaner and enhances flavor melding.

If desired, sprinkle the optional 1 tsp granulated sugar over the warm topping for a little sparkle and additional crispness.

Scoop warm cobbler into bowls or onto plates and top each portion with a scoop of vanilla ice cream. Garnish with remaining 1/2 tsp lemon zest if desired.
