In a medium bowl whisk together brown sugar, paprika, kosher salt, black pepper, garlic powder, onion powder, cumin, coriander, and chipotle/cayenne until evenly combined and free of lumps.
Taste a pinch and adjust for sweetness/salt/heat as desired.

Apply Binder and Rub
Lightly coat both sides of each rib slab with yellow mustard to act as a binder (this won’t flavor the ribs like mustard). Generously press the dry rub onto both sides of the ribs, ensuring even coverage and getting rub into the bone gaps. Let the seasoned ribs rest uncovered in the refrigerator for 30 minutes to 2 hours to let the rub adhere and form a tacky surface (or proceed immediately if short on time).
Smoking/Grill Setup & Cook
Preheat Smoker or Grill
Prepare your smoker or set up a charcoal grill for indirect cooking. Aim for a cooking temperature of 225–250°F (107–121°C). If using a gas grill, light one side and place ribs on the unlit side. Add soaked wood chips to the coals or in a smoker box to produce smoke.
Wrap (Texas Crutch) for Tenderness
After 2–3 hours, when the ribs have developed a deep color and some bark, wrap each slab tightly in aluminum foil. Before sealing, optionally add 2 tablespoons of apple cider vinegar or a splash of apple juice into each packet to create steam. Seal the foil packets well and return to the smoker/grill for another 1 to 1.5 hours, until the meat is tender when probed (a toothpick or skewer should slide in with little resistance).
Finish Unwrapped and Glaze
Carefully unwrap the ribs and place them back on the smoker/grill uncovered. If using the basting sauce, brush a thin layer onto both sides and cook 10–20 more minutes to set the glaze and build a sticky surface. For a crisper bark, finish for 10–15 minutes without glaze. Monitor to prevent burning.
If you prefer no smoke method: preheat oven to 275°F (135°C) and follow the same timing: 2.5–3 hours unwrapped then 1–1.5 hours wrapped, finishing unwrapped with glaze under broiler briefly if desired.

Combine ketchup, apple cider vinegar, honey, Worcestershire, liquid smoke (if using), and hot sauce in a small saucepan. Warm over low heat, stirring, until honey dissolves and the mixture is glossy, 3–5 minutes. Taste and adjust for sweetness, tang, or heat.
Brush onto ribs during the final uncovered 10–20 minutes of cooking, applying 2–3 thin coats rather than one heavy coat to avoid burning.
Rest, Finish & Serve
Rest
Remove ribs from the smoker/grill and let rest uncovered on a cutting board for 10 minutes. Resting allows the juices to redistribute and the glaze to set slightly.
