Method
Prepare and Salt Cabbage
Quarter and rinse
Trim the root end of the napa cabbage just enough to separate leaves while keeping quarters intact. Rinse each quarter under cold running water to remove any dirt between the leaves.
Cut or leave quarters
Option A: For large pieces, keep cabbage in quarters. Option B: For bite-size kimchi-style pieces, cut each quarter crosswise into 1- to 2-inch wide pieces. Place cabbage in a large non-reactive bowl or basin.
Make salt brine
Dissolve 2 tablespoons kosher salt in 4 cups cold water to create a quick brine. Pour brine over cabbage, ensuring leaves are wetted. Alternatively, sprinkle 1 tablespoon salt between layers of leaves in two stages, covering and letting sit between additions.
Soak and massage
Let the cabbage soak for 1 to 1.5 hours, turning the pieces every 20–30 minutes so salt penetrates evenly. If using quarters, gently press liquid into leaves so outer leaves soften. The cabbage should wilt but remain crisp.
Rinse and drain
After soaking, thoroughly rinse cabbage under cold water at least 2–3 times to remove excess salt. Taste a piece — it should be mildly seasoned, not overly salty. Drain in a colander for 15–20 minutes, pressing gently to remove excess water. Pat with paper towels if necessary.
Make Seasoning Paste
Combine aromatics
In a medium bowl, combine minced garlic (3 tsp) and minced ginger (1 tsp). Add the gochugaru (2 tbs), fish sauce (2 tbs) and sugar (1 tsp). Stir until sugar dissolves and paste looks cohesive.
Add vegetables and finishing oils
Fold in the sliced green onions, optional julienned carrot and daikon if using, then stir in toasted sesame seeds (1 tsp) and sesame oil (1 tsp). Taste a small amount of the paste: it should be savory, slightly spicy and balanced. Adjust gochugaru for heat or sugar/fish sauce for balance.
Combine Cabbage and Seasoning
Coat cabbage
Wearing clean gloves (optional, to protect hands from chili and salt), transfer drained cabbage to a large bowl. Add the seasoning paste to the cabbage a few tablespoons at a time, using your hands or a large spoon to rub the paste evenly between the leaves and coat all pieces. Ensure every leaf and crevice gets some seasoning.
Pack into jar or container
Pack the seasoned cabbage tightly into a clean, non-reactive jar or airtight container, pressing down to remove air pockets. Leave about 1–2 inches headspace at the top to allow juices to rise during fermentation.
Fermentation (optional quick method)
For quick serving as a fresh, salted napa cabbage side (not fermented kimchi), refrigerate for at least 30 minutes to let flavors meld and serve chilled. For fermented kimchi-style napa cabbage, leave the packed jar at cool room temperature (65–70°F / 18–21°C) for 1–3 days to start fermentation, then refrigerate. Check daily: press down to keep cabbage submerged in its juices. Taste after 24 hours and refrigerate when desired tang is reached; fermentation will continue slowly in the fridge.
Serve
When ready, spoon Napa cabbage kimchi or seasoned salad into a serving dish. Garnish with an extra sprinkle of toasted sesame seeds and a few more sliced green onions if desired.
