Inspect and purge

Rinse the mussels under cold running water. Discard any mussels with cracked or broken shells. If any mussels remain open, tap them lightly; discard any that do not close. Remove the beard (fibrous clump) by pulling it toward the hinge. Place mussels in a large bowl with 4 cups cold water and 1 tablespoon sea salt for 20 minutes to purge sand. After soaking, lift mussels out (do not pour water with sediment back over them) and rinse briefly. Drain well.

Prep aromatics

Finely mince shallots and garlic, and thinly dice the celery. Zest the lemon and cut it in half for juice. Chop the parsley and pick thyme leaves if using.

Sweat aromatics

In a large, heavy-bottomed pot or deep skillet with a tight-fitting lid, melt 2 tablespoons butter with 1 tablespoon olive oil over medium heat. Add the minced shallots and diced celery and cook, stirring, 3–4 minutes until softened and translucent but not browned. Add the garlic and cook 30–45 seconds until fragrant.

Deglaze and build broth

Pour in 1 cup dry white wine and bring to a simmer, scraping any browned bits from the bottom of the pan. Simmer the wine 2–3 minutes to reduce slightly. Add 1 cup chicken or fish stock and bring the mixture to a gentle simmer. If you prefer a creamy broth, stir in 1 tablespoon heavy cream now.

Cook mussels

Increase heat to medium-high. Add the cleaned, drained mussels to the pot, then sprinkle in the lemon zest, 1 teaspoon freshly ground black pepper, and 1 teaspoon red pepper flakes if using. Cover with the lid and steam for 5–7 minutes, shaking the pot once or twice, until the mussels have opened. Discard any mussels that remain closed after this time.

Finish broth

Remove the pot from heat. Squeeze in the juice of the lemon half (or whole lemon if you like brighter acidity). Stir in the chopped parsley and thyme. Taste the broth and adjust seasoning with salt if needed (start with 1/4 teaspoon and add to taste).

To Serve

Divide mussels and broth among warmed shallow bowls. Serve with crusty bread slices; optionally toast the bread in a skillet with 1 tablespoon butter until golden and rub with a cut clove of garlic for extra flavor. Spoon broth over the bread and enjoy immediately.
