Steak
Temper the steak
Remove the Miyazaki A5 Wagyu from refrigeration and let rest at room temperature for 30–45 minutes. This reduces the temperature gradient so the steak cooks evenly and prevents overcooking the exterior while the center remains cold.
Cooking fat & pan-searing
Sear the steak
Carefully place the steak in the hot pan. For an 8 oz A5 Wagyu about 3/4–1 inch thick: sear 45–60 seconds on the first side without moving to develop a rich crust. Flip and sear the other side 45–60 seconds. If your steak is thicker or you prefer slightly more cook, add 15–30 seconds per side, but err on the side of undercooking—the marbling renders quickly.
Finish with butter and aromatics
Reduce heat to medium. Add the unsalted butter, smashed garlic clove, and herb sprig to the pan. Tilt the pan slightly and spoon the melted butter and aromatics over the steak (baste) for 15–30 seconds to add flavor and gloss. This step is optional but traditional.
Resting & finishing
Rest the steak
Transfer the steak to a warm plate or cutting board and let rest 3–5 minutes. Because A5 Wagyu is rich and well-marbled, it requires a shorter rest than leaner cuts; this allows juices to redistribute without cooling too much.
Slice and plate
If serving sliced, cut the steak against the grain into thin slices (about 1/8–1/4 inch). Arrange on a warm plate. Optionally finish with a light sprinkle of flaky salt or the reserved 1/4 tsp kosher salt and a few cracks of fresh black pepper.
