Build the drink

Fill a highball or Collins glass with ice (about 1 cup). Pour in the vodka, lychee liqueur (or lychee syrup), and fresh lime juice. If you like the cocktail sweeter, add the 0.25 oz simple syrup.

Top and finish

Gently top with 6 oz chilled ginger beer. Add 1 dash of Angostura bitters over the top. Give the drink a gentle stir β€” 2 or 3 slow turns with a bar spoon β€” to combine without flattening the ginger beer.

Garnish & Serve

Slap the mint sprig between your hands briefly to awaken the aromatics and place it on the top of the drink. Thread a piece of candied ginger or a peeled lychee onto a cocktail pick and rest it on the glass rim along with a lime wheel or wedge. Serve immediately with a straw.
