If the bottle is not already chilled, prepare an ice bath by filling a bucket or container with ice and cold water. Submerge the bottle in the ice bath and chill for 20–30 minutes until it reaches about 6–8°C (43–46°F). Alternatively, place the bottle in the refrigerator for at least 3 hours prior to serving.

Chill the bottle

Once chilled, remove the bottle from the ice bath, dry the bottle neck with a towel, and keep it cold by placing the bottle in an ice bucket or returning it to the refrigerator between pours.

Hold the bottle at a 45° angle pointing away from people and break the foil. Keep a thumb over the cork and slowly twist the bottle (not the cork) while holding the cork to ease it out with a quiet pop. Wipe the lip of the bottle with a clean napkin.

Open the bottle safely

Pour the wine slowly into chilled flutes, tilting the glass and pouring down the side to preserve bubbles. Fill each flute about two-thirds full (roughly 100–120 ml per glass).

Select chilled champagne flutes. If glasses are warm, place them in the refrigerator for 10–15 minutes or run under cold water and dry immediately.

Garnish each flute optionally: a thin lemon twist expressed over the glass and rested on the rim, or a fresh strawberry sliced partway and perched on the rim. Avoid heavy garnishes that mask the wine's aromas.

Serve immediately after pouring for optimal mousse and aromatic expression.

If you want to use the Grande Cuvée as a base for a light French 75-style cocktail, combine gin (90 ml), fresh lemon juice (60 ml) and simple syrup (30 ml) in a cocktail shaker with ice. Shake vigorously for 10–12 seconds, then strain into 3–4 chilled flutes or coupe glasses (roughly 30 ml of the shaken mixture per glass). Top each glass with the chilled Le Grand Courtâge Grande Cuvée Brut Blanc de Blancs (about 60–80 ml per glass). Garnish with a lemon twist. Adjust gin and lemon proportions to taste; this will produce a bright, sparkling cocktail that complements the Blanc de Blancs character.

French 75-style quick assembly (serves 3–4)

If making single French 75 servings: combine 30 ml gin, 15–20 ml lemon juice, 7–10 ml simple syrup in a shaker with ice, shake and strain into a flute, then top with ~90 ml sparkling wine.
