Chill glass

Place a Nick & Nora or coupe glass in the freezer for a few minutes or fill it with ice and water while you prepare the cocktail to chill.

Combine ingredients

In a mixing glass add 3 large ice cubes, 2 oz Hennessy Paradis, 0.25 oz demerara sugar syrup, 2 dashes orange bitters and 1 dash Angostura bitters.

Stir

Stir the mixture gently with a bar spoon for 20–30 seconds (about 30–40 full spoon turns) until well chilled and slightly diluted—aim for a silky, clear chill without over-dilution.

Prepare glass

Dump the ice or water from the chilled glass and strain the stirred cocktail into the glass using a Hawthorne or julep strainer and a fine strainer if available to catch any shards.

Express oil & garnish

Take an orange twist and hold it over the cocktail, skin side down, about 2–3 inches above the surface. Give the twist a firm squeeze to express the oils over the drink, then run the peel around the rim and drop it into the glass as garnish.

Flambé (optional — exercise caution)

If you want a pronounced toasted aroma, warm 0.25 oz high-proof spirit in a metal spoon or warmed glass, briefly ignite with a long lighter, tilt the spoon so the burning spirit drips briefly over the surface of the cocktail, then extinguish. Do not pour flaming spirit into the glass. Allow the aromatics to settle a few seconds before serving. Only attempt in a safe, open environment away from flammable materials.
