Prepare greens

Wash the mixed seasonal greens thoroughly to remove grit. Shake off excess water and spin dry if possible. Trim any tough stems (for kale/ Swiss chard remove thick center ribs; chop leaves into 1- to 1½-inch pieces). Stack leafy greens and roughly chop if not already in bite-sized pieces.

Slice aromatics

Peel and thinly slice 6 garlic cloves. Peel and thinly slice 1 shallot (or small onion). Measure out red pepper flakes and other seasonings so they’re ready.

Warm oil and infuse garlic

Place a large wide skillet or sauté pan over medium heat. Add 3 tablespoons extra-virgin olive oil and let it warm until it shimmers but is not smoking (about 1 minute). Add the sliced garlic and shallot in an even layer. Cook, stirring frequently, 1–2 minutes until the garlic is fragrant and just starting to turn pale golden. Watch carefully so it doesn’t burn; if it begins to brown too fast, reduce heat slightly.

Add red pepper and deglaze

Stir in 1/4 tsp crushed red pepper flakes and cook 15–20 seconds. Pour in 1/4 cup vegetable or chicken stock (or water) to deglaze the pan and loosen any browned bits, scraping the bottom with a wooden spoon.

Add greens in batches

Add the chopped greens to the pan in batches, tucking them down as they wilt. After the first addition, sprinkle 1/2 teaspoon of the salt over the greens to help draw out moisture. Continue adding remaining greens, allowing each addition to wilt before adding more (about 1–2 minutes per handful). Stir to combine so all leaves are coated with the garlic-infused oil and pan juices.

Finish cooking

Once all greens are wilted but still bright (total cooking time 4–6 minutes depending on greens), reduce heat to low. Taste and add the remaining 1/2 teaspoon salt if needed and 1/2 teaspoon freshly ground black pepper. Squeeze 1 tablespoon fresh lemon juice over the greens and toss to combine. Cook another 30 seconds to meld flavors.

Optional garnish

If using, sprinkle 2 tablespoons toasted sliced almonds or pine nuts over the greens just before serving for crunch and flavor contrast.

Transfer the garlic seasonal greens to a warmed serving dish or serve directly from the pan. Serve hot as a side vegetable alongside protein or over grains. Leftovers refrigerate well for up to 3 days and can be gently reheated with a splash of water or stock.
