Clean and separate enoki

Trim root base from enoki mushroom clusters: trim about 1/2 inch (or remove compact base) and gently separate into small bundles or individual stems. Rinse quickly under cold running water to remove grit, then pat dry thoroughly with paper towels or spin in a salad spinner; excess moisture prevents good sear.

Mince aromatics and slice scallions

Peel and finely mince garlic cloves. Slice scallions thinly on a bias, keeping white and light green parts separate from dark green tops for garnish.

Measure soy sauce, mirin, rice vinegar, sesame oil, salt, pepper, and toasted sesame seeds into a small bowl and set near the stove.

Heat pan

Place a large nonstick or stainless steel skillet over medium-high heat. Add neutral oil and let it heat until shimmering but not smoking (about 1–2 minutes).

Sauté garlic and scallion whites

Add butter to the hot oil. When butter melts and foams slightly, add minced garlic and the white/light-green scallion pieces. Sauté for 20–30 seconds until fragrant but not browned.

Cook enoki

Add the prepared enoki mushrooms in an even layer. Let them sit undisturbed for 30–45 seconds to develop light color, then gently toss or stir to distribute. Cook 1.5–2 minutes total until stems are tender-crisp; do not overcook — they should retain some texture.

Finish with sauce

Pour the soy sauce and mirin mixture over the mushrooms, add rice vinegar and sesame oil, then toss quickly to coat and evaporate excess liquid, about 15–30 seconds. Taste and adjust seasoning with kosher salt and freshly ground black pepper. If using red pepper flakes, sprinkle them in and stir once.

Serve

Transfer enoki mushrooms to a warm serving dish. Sprinkle toasted sesame seeds and the dark green scallion tops (reserved earlier) over the mushrooms. Add shredded nori or furikake if using.

Serve immediately with lemon wedges on the side for a bright squeeze before eating. This makes 2–3 appetizer servings or 1–2 side-dish servings.
