Prep and preheat

Preheat oven to 220°C (425°F). Place four 6-ounce (180 ml) ramekins on a baking sheet. Generously butter the inside of each ramekin, then dust with cocoa powder, tapping out the excess. This prevents sticking and gives a clean release.

Melt chocolate and butter

Chop the chocolate into small pieces. In a heatproof bowl set over a small saucepan of barely simmering water (double boiler), combine the chocolate and 120 g butter. Stir gently until fully melted and smooth. Alternatively, microwave in 20-second bursts at 50% power, stirring between bursts, until melted. Remove from heat and let cool for 2 minutes.

Mix eggs and sugar

In a separate medium bowl, whisk together 2 whole eggs, 2 egg yolks, and 100 g granulated sugar until the mixture is pale and slightly thickened, about 1–2 minutes by hand or 30–45 seconds with an electric mixer on medium.

Combine chocolate and egg mixtures

Slowly pour the slightly cooled chocolate-butter mixture into the egg-sugar mixture while whisking continuously to temper the eggs and create a smooth batter. Add a pinch of salt and mix until uniform.

Fold in flour

Sift 50 g all-purpose flour over the batter and gently fold with a spatula until just combined and no streaks of flour remain. Do not overmix; the batter should be thick but pourable.

Fill ramekins

Divide the batter evenly among the prepared ramekins (about 100–110 g batter each). Smooth the tops with the back of a spoon.

Bake

Place the baking sheet with ramekins in the preheated oven and bake for 10–12 minutes. Start checking at 10 minutes: the edges should be set and firm, while the centers remain soft and slightly jiggly. Baking time may vary slightly with oven; underbaking yields a runnier center.

Rest and unmold

Remove from oven and let the cakes rest for 1 minute. Run a small knife around the edge of each ramekin to loosen. Place an inverted dessert plate over each ramekin, quickly flip, and gently lift the ramekin off to release the cake. If cake resists, let rest an additional 10–20 seconds and try again.

Serve immediately

Place each warm lava cake on a serving plate. Dust with powdered sugar if using, add a scoop of vanilla ice cream to the side or on top so the cold ice cream meets the hot cake to create a pleasing contrast. Garnish with fresh berries and mint leaves as desired.

Scoop 1 scoop of high-quality vanilla ice cream per cake and place beside or on top of each warm lava cake immediately before serving so the ice cream softens and melts slightly into the molten center.

If ice cream is very hard, let it sit at room temperature for 3–5 minutes or scoop with a warm scooper for a cleaner appearance.

Optional Garnishes

Scatter fresh berries around the plate and place a mint leaf atop each ice cream scoop. Lightly dust the cakes with the powdered sugar using a fine sieve for an elegant finish.
