Combine and shake

Add 2 oz bourbon, 0.75 oz fresh lemon juice, 0.5 oz simple syrup, 0.25 tsp hot sauce, and 2 dashes Angostura bitters into a cocktail shaker. Fill the shaker with ice to about three-quarters full.

Shake

Secure the shaker and shake vigorously for 12–15 seconds until the outside of the shaker feels very cold and the ingredients are well chilled and slightly diluted.

Prepare glass

If desired, rub the rim of an old-fashioned glass with the lemon wheel and dip lightly into a pinch of coarse salt. Add fresh ice to the glass.

Strain

Double-strain the cocktail into the prepared old-fashioned glass over fresh ice using a Hawthorne strainer and a fine mesh strainer to remove small ice shards and any pulp.

Garnish & Finish

Express the lemon wheel over the drink to release oils, then drop it into the glass. Add the celery leaf or small celery stalk as an aromatic garnish.

Adjust heat

Taste and, if you prefer more heat, add an additional 1/8–1/4 tsp hot sauce and stir gently to combine. If the cocktail is too sharp, add 1/4 oz simple syrup to balance.
