Pat chicken slices dry with paper towel and season lightly with 1/4 tsp salt and 1/4 tsp pepper if desired. If using cold store-bought cooked chicken, slice thinly into even pieces for stacking.

Slice the tomato into 1/4-inch rounds; lay on paper towel and lightly salt to draw out excess moisture (this prevents soggy bread).

Separate and stack the lettuce leaves; dry thoroughly so they don’t make the sandwich soggy.

If bacon is not cooked, cook until crisp in a skillet over medium heat (about 6–8 minutes), turning as needed. Drain on paper towels.

Make the spread

Combine

In a small bowl, stir together mayonnaise (3 tbs) and Dijon mustard (1 tsp) until smooth. Season with 1/4 tsp salt and 1/4 tsp black pepper. Taste and adjust — this will be spread on the bread.

Assemble and toast

Lightly brush one side of each sourdough slice with olive oil (or spread softened butter on one side for a richer crust). Place oiled/buttered side down on a hot skillet or griddle over medium heat.

Place 3 slices of bread on the skillet, oiled side down. Immediately spread mayonnaise-Dijon mixture on the top (un-toasted) sides of the bread slices while the bottom toasts. Toast until golden brown (about 2–3 minutes).

Flip each toasted slice. On the toasted side now facing up, layer as follows for each sandwich: 1) 2 slices Swiss cheese, 2) about 2/3 cup sliced chicken (approx. 1/3 of the chicken per sandwich), 3) 2 slices ham, 4) 2 slices crisp bacon, 5) tomato slices (2–3 rounds), 6) a few rings of red onion (to taste), 7) 1 lettuce leaf, 8) spread a thin layer of remaining mayonnaise-Dijon on the second slice of bread and place on top (toasted side down).

Press gently, then return sandwich to the skillet for 1–2 minutes more to melt the Swiss slightly and warm fillings. If using a sandwich press, close and grill for about 2 minutes until cheese melts.

Finish and serve

Remove sandwiches from skillet and let rest 1 minute. Using a sharp knife, cut each sandwich diagonally into quarters (if stacking double-decker, secure with toothpicks).

Serve immediately with optional pickle spear or chips. Provide extra mayonnaise or mustard on the side if desired.
