Method
Brews Burger Sauce
In a small bowl, combine mayonnaise, ketchup, Dijon mustard, sweet pickle relish, apple cider vinegar, smoked paprika, garlic powder, hot sauce (if using), salt and pepper. Whisk until smooth and well combined.
Taste and adjust: add a little more vinegar for tang, more relish for sweetness, or more hot sauce for heat. Cover and refrigerate at least 15 minutes (or up to 24 hours) to let flavors meld.
Toppings Prep
Wash and dry lettuce leaves. Trim large leaves to bun size if needed.
Slice the tomato into 1/4-inch (6 mm) thick rounds. Pat dry with paper towel to reduce excess moisture.
Burger Patties & Assembly
Form Patties
Divide the ground beef into two equal portions (about 8 ounces each). Gently shape each portion into a patty about 3/4-inch thick and slightly wider than your buns (they will shrink as they cook). Make a shallow dimple in the center of each patty with your thumb to prevent puffing.
Season
Season both sides of the patties with kosher salt and freshly ground black pepper just before cooking.
Cook Patties
Heat a large skillet or cast-iron pan over medium-high heat and add 1 tablespoon vegetable oil. When the oil is shimmering and just starting to smoke, add the patties (do not overcrowd). Cook for 3-4 minutes on the first side without moving, until a deep brown crust forms. Flip and cook 2-3 minutes on the second side for medium (adjust time ±1 minute for desired doneness).
Add Cheese
About 1 minute before the patties are done, place a slice of cheddar on each patty. Reduce heat to low and cover the pan or place a lid over the patties to help the cheese melt, about 30-60 seconds.
Assemble
Spread about 1 to 1 1/2 tablespoons of Brews Burger Sauce on the bottom bun. Place a lettuce leaf, then the cheeseburger patty. Add a slice of tomato and a few red onion rings. Spoon another 1 tablespoon of sauce on the top bun and close the burger.
Serve immediately with extra sauce on the side, and optional fries or pickles.
