Bring to room temperature

Remove the wagyu steak from the refrigerator 45–60 minutes before cooking and leave it uncovered or loosely tented at room temperature. This helps even cooking and prevents the exterior from overcooking while the interior comes up to temp.

Season

Pat the steak dry on both sides with paper towels. Sprinkle kosher salt evenly across both faces and the edges (about two-thirds of the salt now — reserve a little finishing salt). Grind the black pepper over both sides just before cooking.

Preheat pan

Place a heavy cast-iron skillet or stainless-steel pan over high heat until very hot (about 5–7 minutes). Add the neutral oil and swirl to coat; it should shimmer but not smoke heavily.

Sear

Carefully place the steak in the hot pan. Do not move it for 2–3 minutes to form a deep brown crust. Flip and sear the other side for 2–3 minutes. Adjust times if steak is thicker: sear until a deep caramelized crust forms.

Baste

Reduce heat to medium. Add the unsalted butter, smashed garlic cloves, and herb sprigs to the pan. As the butter foams, tilt the pan slightly and use a spoon to continuously baste the butter over the top of the steak for 1.5–2 minutes. This builds flavor and helps finish the steak.

Check doneness & rest

Use an instant-read thermometer to check internal temperature: 120–125°F (49–52°C) for rare, 125–130°F (52–54°C) for medium-rare. Remove the steak when it is 5°F (3°C) below your target (carryover will raise it). Transfer the steak to a cutting board and rest loosely tented with foil for 8–10 minutes.

Slice & finish

After resting, slice the steak against the grain into 1/4–1/2-inch slices. Sprinkle with flaky sea salt and fresh microgreens or parsley. If using, spoon a small amount (about 1–2 tablespoons per serving) of warm red wine pan sauce alongside or over the slices.

Optional finishing & sides

If you plan to make a quick pan sauce after cooking: after removing the steak to rest, keep the pan over medium heat, add 1/4 cup red wine or beef stock to deglaze, scrape up browned bits, reduce by half, then whisk in 1 tablespoon cold butter off heat to gloss the sauce. Strain if desired and serve warm.

Serve wagyu slices immediately with simple sides (roasted potatoes, sautéed mushrooms, or a green salad). Because wagyu is richly marbled, keep accompaniments straightforward to let the beef shine.
