Prepare the Caramelized Onions

Slice the onion thinly and cook it in a skillet over medium heat with 1 tablespoon of butter until golden brown and caramelized, about 15-20 minutes. Stir occasionally to prevent burning.

Make the Parmesan & Rosemary Butter

In a small bowl, mix the softened butter, grated parmesan, and chopped fresh rosemary until well combined.

Assemble the Sandwich

Spread the Parmesan & rosemary butter on one side of each slice of Texas toast. On the non-buttered side, layer white cheddar cheese, caramelized onions, and spinach. If using, add bacon, BBQ smoked brisket, or smoked pulled pork.

Grill the Sandwich

Heat a skillet over medium heat and place the assembled sandwich in the skillet, buttered side down. Cook for 3-5 minutes until golden brown, then carefully flip and cook the other side until the cheese is melted and the bread is golden brown, about another 3-5 minutes.

Serve

Remove the sandwich from the skillet, slice in half, and serve immediately.
